Recipe: Beef Mushroom and Spinach Lasagna

for the halloween this year, we had a potluck party. based on a request, i made lasagna then i also decided to make a carrot cupcake with spider decoration. i made a modifications to my usual boring beef lasagna, by adding mushroom & spinach. here’s the recipe for my easy peasy lasagna:

– 500 gr lean ground beef
– 1 onion, chopped
– 1 can of mushroom, drained
– 1 jar pasta sauce (or you can use tomato paste)
– 1 (16 ounce) package cottage cheese
– 1 pint ricotta cheese
– 1/2 cup grated parmesan cheese
– 2 eggs
– 1 package no-cook lasagna noodles
– 8 ounces shredded mozzarella
– 2 bay leaves
– pepper & salt to taste
– 3-4 cloves of garlic / garlic powder
– 1 package frozen spinach (optional)

1. in a large skillet, cook and stir ground beef until brown. add mushrooms, garlic and onions; saute until onions are transparent. stir in pasta sauce, drop in bay leaves, pepper & salt, heat through.

2. in a medium size bowl, combine cottage cheese, half-serving of parmesan cheese & eggs.

3. spread a thin layer of the meat sauce in the bottom of a 13×9 inch pan. layer with uncooked lasagna noodles, meat sauce, cottage cheese mixture, ricotta cheese, and spinach. continue layering until all ingredients are used. spread 1/2 of the mozzarella cheese. cover pan with aluminum foil.

4. bake in a preheated 350 degree F (175 degree C) oven for 45 minutes. uncover, and top with remaining half cup of mozzarella & parmesan cheese. bake for an additional 15 minutes. remove from oven, and let stand 10 to 15 minutes before serving.

if i was too lazy to use so many cheese, sometimes i would just make cheese sauce (similar like bechamel sauce). the ingredients i need would just be butter, milk, flour, parmesan cheese, cheddar cheese, salt & pepper.

first i’d melt the butter until foaming, put in 1 tbs of flour. cook, stir until bubbly then remove from heat. put in the milk, stir constantly then return back to heat. keep stirring until it thickens, then remove from heat. pour in all the cheese, salt & pepper, and nutmeg if you like.

that’s it! when you layer in the lasagna, just put in the cheese sauce on top of the meat sauce evenly and follow the same instructions as the above.
