Recipe: Red Velvet Cupcake

since this cupcakes bakery opened its shop at millenia walk, near my office, i’ve been going there to pick up a cupcake on my coffee break at work. hey, i was pregnant at the time, so i can eat whatever i want haha.. the red velvet cupcakes they sell are to die for! i just loove biting into its moist cake and its cream cheese frosting.

so after i gave birth to neishia, i can’t stop craving for it. it was to the point that i asked hubby to pick them up on his way home. since they’re usually out of stock by then, i actually called and reserved the cakes for hubby to pick up. that was how good the cakes are and how much i’m in love with them. the thing is, i’m not really into something sweet, so it’s a surprise that i can eat a bunch of them and crave for them all the time.

today, neishia is almost 40 days old, and i’m craving for another red velvet cupcake. so i decided to make them. i haven’t gone inside my kitchen for baking for awhile now, so i figured, maybe it’s time that i start baking again. red velvet cupcakes would be a perfect start to make.

i made a whole batch of recipe, which resulted 20 regular sized cupcakes and a dozen mini cupcakes. this recipe created such a moist cupcakes that i finished 5 mini cupcakes in one go, it’s soo good! hubby said that it’s even better that the ones from twelve cupcakes. o yeah!

since i won’t be able to finish all of them, i keep the mini ones at home while hubby takes the regular size to work for his co-workers.

here’s the recipe for you to try out. got the recipe from HERE, with a little modifications from me.

>> SUPER MOIST RED VELVET CAKE

ingredients:
* 2 cups all purpose flour
* 1 teaspoon of baking soda
* 1 teaspoon of baking powder
* 1 teaspoon of salt
* 2 tablespoon of unsweetened, cocoa powder
* 2 cups sugar (i use only 1.5 cups)
* 1 cup vegetable oil
* 2 eggs
* 1 cup buttermilk (i make my own buttermilk; see notes below)
* 2 teaspoon of vanilla
* 1-2 oz. red food coloring (i only use a drop. no need to use them if you don’t want)
* 1 teaspoon of white distilled vinegar
* 1/2 cup of prepared plain hot coffee (donโ€™t skip this ingredient)
* chocolate bar, grated

instructions:
1. preheat oven to 325.
2. in a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
3. in a large bowl, combine the sugar and vegetable oil.
4. mix in the eggs, buttermilk, vanilla and red food coloring until combined.
5. stir in the coffee and white vinegar.
6. combine the wet ingredients with the dry ingredients a little at time, mixing after each addition, just until combined.
7. pour the batter evenly into each baking cups, or you can make a regular cake and bake it in well greased pan
9. bake in the middle rack for 30-40 minutes, or until a toothpick comes out clean. Do not over bake as cake will continue to cook as it cools.
10. let it cool before you swirl the cream cheese frosting on top.
11. sprinkle the grated chocolates on top of the frosting or whatever you want for the topping.

>> CREAM CHEESE FROSTING

1 pack of cream cheese, softened (i use philadelphia cream cheese)
1/4 cup milk
1/2 stick of butter, slightly melted or room temp
2 teaspoon vanilla extract
1 cup of powdered sugar

combine all of them in a bowl and mix together till creamy.

>> MAKING YOUR OWN BUTTERMILK

1 cup of milk
1 tablespoon white vinegar or lemon juice

put the vinegar/lemon juice in a cup. pour in the milk until it reaches 1 cup measurement. set it aside for 5 minutes then use it as much as your recipe calls for.

    otty: oya? kok bisa samaan? hehe tapi emang kuenya super moist dan enaakk bgt. cuma kalo pas lagi ngaduk batternya bakal sedikit kuatir krn batternya enceer banget, gak kayak batter cupcake/kue gitu. tp disitu kunci moist-nya.
